Ingredients
- 500 gram chopped pitted dates
- 1 cup boiling water
- 250 gram semolina ( rulang )
- 1 teaspoon baking soda
- 2 teaspoon baking powder
- 1/4 teaspoon salt
- 250 gram Pelwatte Butter
- 200 gram sugar
- 1 teaspoon vanilla,rose & almond essence
- 4 eggs
- 100 gram cashew nuts, raisins and pumpkin preserve
Method
Stir together dates, boiling water& baking soda. Sat aside for 2 hours.
Sieve flour three times with baking powder & salt on to a paper to mix well.
Cream Pelwatte butter & slightly roasted rulang together in a basin.
Cream Sugar and egg yolks together (separate mixing bowl).
Beat the egg whites to a foam. (separate mixing bowl).
Mix all to rulang & butter mix with a wooden spoon. Add chopped cashew nuts, raisins and pumpkin preserve.Stir in cooled date-water mixture alternately to beaten the mixture,until each addition has combined.
Add all the essences and mix well.
Bake in 160 oven for 45 minutes.
